This natural fermentation process not only gives sourdough its distinct tangy flavor but also offers several health benefits.
During fermentation, the starter works to break down phytic acid, which is present in grains. This process unlocks essential nutrients, making them more bioavailable and easier for the body to absorb. Additionally, sourdough fermentation helps to break down gluten, which can make the bread more tolerable for individuals with gluten sensitivities, though it is not gluten-free.
